Ingredients: 1 1/2 lbs ground pork 1 1/2 tbsp oil 1 clove garlic, peeled and crushed 1 red chili, seeded and chopped 3-4 stems coriander leaves (chinese parsley), chopped 1/4 cup peanuts, coursely chopped 1 tbsp fish sauce 1 tbsp brown sugar Lychee fruit or rambutan fruit, seeded. Fresh or canned. Salt, pepper to taste Directions:Saute garlic in oil. Add pork and chilies. Add other spices, stirring occasionally until mixture is cooked but NOT dry. Add peanuts. Arrange pieces of lychee fruit on a serving dish and fill each with a spoonful of pork mixture. Lightly press to bind the mixture. Garnish with fresh coriander leaves. |
