250 g flour
125 g butter
1 pinch salt
1 egg yolk
Time: 40 min
1. Shape the flour into a fountain on the counter. Add in the middle the soft butter in chunks, the salt and egg yolk.
2. Start kneading with the fingertips, slowly combining with flour and adding a bit of water. Add the remaining flour gradually. Form a ball.
3. Press the dough between the palm of your hands to homogeneize it.Do not overknead the dough or it will turn very sandy and fragile.
4. Let it rest in the fridge for 30 minutes.
