Ingredients: 75 g ground nougatine 75 g candied fruits 75 g dried (grapefruit) 35 ml Grand-Marnier 4 egg whites 50 g powdered sugar 50 g glucose 100 g honey 1/2 litre whipping cream Time: 1 hr 10 min Directions:1. Whip the cold whipping cream and keep it refrigerated. Mix the nougatine, candied fruits, raisins and Grand-Marnier. Let it soak. 2. In a pot, bring together the sugar, glucose and honey. Cook at 121 C (250 F). 3. Beat the egg whites until stiff with a hand mixer and add at the cooked sugar at low speed. Increase the speed and beat until fully cooled. 4. At this stage you should have soaked fruits, whipped cream and cooled honey meringue. 5. Fold gently the cold meringue into the whipped cream with the soaked fruits. You should obtain a homogeneous mix. Beware! Don`t mix it too much. 6. Mould into individual inox or clay bowl. Smooth the surface with a metal spatula. Let it set for a few hours in the freezer. 7. Decoration of your choice (fresh fruits in this case). |
