Ingredients:1 large or 2 small Skatewing fillets, about 1 lb 2-4 banana leaves, depending on size wooden toothpicks 1 tbsp corn or vegetable oil Marinade: 1 tsp ground cumin 1 tsp turmeric powder 1/2 tsp ginger powder 1 tsp onion powder 1 tsp coriander seeds, crushed 1/2 tsp red chilli flakes 1/2 tsp brown sugar 2 dried lime leaves, crushed 1/2 tsp ground cardamom salt and black pepper to taste
Directions:1. Soak banana leaves and toothpicks in water for at least 2 hours to make sure they don`t singe whilst in the oven. Wash fish and pat dry. 2. Mix ingredients for marinade together and rub on the skatewing. Dry banana leaves on clean cloth, brush the insides with oil, and wrap the fish in them. Secure with toothpicks and let stand at room temperature for 1/2 to 1 hour. 3. Preheat oven to 350 F. Cook the skatewing until it is medium well or 70% cooked, about 25-30 minutes. Remove from oven and place on plate. Cut open banana leaves and serve immediately. |
