Ingredients: 175 g (6oz) bulgar wheat (cracked wheat) grated zest and juice of 1 orange 1 tablespoon clear honey 1 tablespoon walnut or olive oil 1 tablespoon chopped fresh mint 2 heaped tablespoons raisins or sultanas 75 g (2 3/4oz) ready to eat dried apricots, chopped 2 celery sticks, thinly sliced 75 g (2 3/4oz) seedless red or green grapes, halved 100 g (3 1/2oz) feta cheese, cut into small cubes salt mints sprigs to garnish
Directions:1. Put the bulgar wheat into a large bowl and add a generous pinch of salt. Pour over enough boiling water to cover, then leave to soak for about 20-30 minutes, until swollen and tender. 2. Mix together the orange zest and juice, honey, walnut oil or olive oil and chopped mint. 3. Drain any excess water from the soaked bulgar wheat then add the orange juice dressing, stirring well. Add the raisins or sultanas, apricots, celery, grapes and cheese, tossing well to mix. 4. Divide between four serving plates or bowls, garnish with mint sprigs then serve. |
