Ingredients: 150 g potato, peeled and chopped 1 medium carrot, peeled and chopped 100 g cauliflower, cut into small florets a knob of butter 2 medium tomatoes (175 g) skinned, de-seeded and roughly chopped 50 g mild cheddar cheese, grated Directions:1. Put the potato, carrot and cauliflower into a saucepan and just cover with boiling water. Cover and cook for 20 minutes. Meanwhile, melt the knob of butter and saute the tomatoes for about 2 minutes until slightly mushy, then stir in the grated cheese until melted. 2. Blend the vegetables together with the cheese and tomato sauce. |
