Ingredients: 2 tbsp olive oil 1 small onion, chopped 1 clove garlic, crushed 75 g carrots, chopped 75 g courgettes, chopped 75 g mushrooms, sliced 1 X 400 g tin chopped tomatoes 175 ml chicken or vegetable stock 1/2 tsp brown sugar salt and pepper to taste 200 g pasta of your choice (cook according to packet instructions) Directions:1. Heat the oil in a pan, add the onion and garlic, and saute for about 3 minutes. 2. Add the carrots, courgettes and mushrooms, and cook for about 15 minutes or until softened. 3. Add the tomatoes, stock and sugar, season to taste, and simmer for 10 minutes. Blend to a puree. If you want a very smooth sauce you can sieve it. If you wish, stir in 2-3 tbsp of mascarpone. Toss the pasta with the sauce. |
