Ingredients:1 onion, finely chopped vegetable oil 450 g lean minced beef 1 slice of bread made into breadcrumbs 1 tsp mixed herbs 2 handfuls of parsley, chopped 1 apple, peeled and grated 1 chicken stock cube, crumbled 50 ml cold water Sweet and Sour Sauce: 1 onion, finely chopped 1 small red or green pepper,de-seeded and finely chopped 1 x 400 g can of chopped tomatoes 1 tbsp tomato puree 175 ml pineapple juice 1/2 tbsp brown sugar Directions:1. Saute the onion in 1 tbsp of the oil until softened. 2. Mix the onion and all the remaining ingredients together. 3. Using your hands form into 25 to 30 meatballs and roll in some flour. Saute in shallow vegetable oil until browned. 4. To make the sweet and sour sauce, saute the onion and pepper in the oil until soft. Add the rest of the ingredients plus a little freshly ground black pepper, bring to the boil and simmer for 15 minutes. 5. Pour over the meatballs in a casserole, cover and cook in an oven pre-heated to 180 C or 350 F for 15 to 20 minutes. 6. Serve with Chinese fried rice. |
