Ingredients: 1 pound medium to large shrimp, peeled and deveined 1-2 teaspoons minced garlic 1/2 cup apricot preserves 1/4 cup lime juice 1/2 cup shredded coconut 1 teaspoon salt 1/4 teaspoon crushed red pepper 4 slices pineapple (fresh or canned) 1 green pepper, cut into thin strips 1 medium red onion, halved & thinly sliced 4 (12x12-inch) pieces heavy duty foil 2 cups long grain rice, cooked
Directions:1. Preheat oven to 450 degrees. In a small bowl, combine garlic, preserves, lime juice, coconut, salt and red pepper; set aside. 2. Place a pineapple slice on each piece of foil. Top with green pepper, onions and shrimp. Spoon sauce over shrimp and seal packet edges tightly. 3. Place packets on a metal baking sheet and bake for 10 to 12 minutes. Carefully open packets and spoon over hot rice. |
