Ingredients: 2 lg acorn squash (cut in half and scooped out) hot water 12 oz smoked sausage sliced 1 15 1/2 oz can red kidney beans 1/2 c walnut pieces 1/2 cup golden raisins 1 med green apple, cored cut into 1/2 inch pieces 1/4 c light brown sugar 1/4 tsp ground cinnamon 1/8 tsp ground nutmeg 1/4 cup butter or margarine endives or parsley Directions:Place squash, cut sides down in baking pan: add 1/2 inch hot water. Bake covered at 375 degrees for 20 minutes. Saute sausage until lightly browned: drain well. Mix sausage, beans,walnuts, raisins and apples. Mix brown sugar, cinnamon and nutmeg: sprinkle over bean mixture and toss. Turn squash halves cut sides up: fill with bean mixture. Dot with butter. Bake at 375degrees loosely covered until squash halves are fork tender, about 30 minutes. Garnish with endives. |
