Ingredients: sunflower or other light oil, or cooking spray 1/2 pound Chinese-style firm or extra-firm tofu, cut in 1/2-inch cubes 1/2 cup lima beans, fresh, frozen, canned, or cooked (dried) 1/2 cup Brazil nuts, chopped 1 cup broccoli, fresh or frozen, cut into bite-sized pieces 1 cup green beans, fresh or frozen, cut into bite-sized pieces 1-1/2 Tablespoons fresh chives or scallion (green part), chopped 2 Tablespoons fresh parsley, chopped 1 teaspoon salt or to taste 1/4 teaspoon black pepper or to taste 1 teaspoon tarragon 2 teaspoons prepared Dijon or brown mustard 2 Tablespoons water 1 Tablespoon extra virgin olive oil Directions:Preheat oven to 350 deg F. Oil a 2-quart oven-proof dish. Combine tofu, beans, nuts, vegetables, chives, and parsley in the dish. Mix the remaining ingredients well in a small cup or bowl, and pour evenly over the top. Cover the dish with the lid or with aluminum foil and bake for 20 to 25 minutes, until vegetables are tender. |
