Ingredients: 4 fresh or frozen halibut or salmon steaks, cut 3/4 to 1 inch thick 1/3 cup of chopped onion 1 clove garlic, minced 1/2 teaspoon of dried basil, crushed or dried dillweed 1/8 teaspoon of dried chervil, crushed 1/8 teaspoon of pepper 2 teaspoons of cooking oil 1/4 cup of snipped parsley 1/3 cup of plain fat free yogurt Directions:Thaw the fish, if frozen. Rinse the fish and pat dry with paper towels. In a small saucepan cook the onion, garlic, basil, chervil or dillweed and pepper on hot oil until the onion is tender. Stir in the parsley. Set aside. Place the fish on a greased rack in a shallow baking pan. Bake, uncovered, in a 400 degree oven for 10 minutes. Remove from the oven. Spread the fish with yogurt, sprinkle with the herb mixture. Bake for 5 to 10 minutes more or until the fish flakes easily with a fork. |
