Ingredients: 1 large eggplant, peeled and cubed 2 tablespoons water 2 eggs 1/4 cup chopped onion 2 cups fresh bread crumbs 1/2 teaspoon fine sea salt 1/4 teaspoon pepper 1/4 teaspoon oregano 1/4 teaspoon paprika 1 cup shredded Cheddar cheese 1/2 cup salsa Directions:Microwave eggplant and water, covered, on High 9 minutes. Drain and mash eggplant. Combine with remaining ingredients. Pour into ring mold. Microwave on High 7-9 minutes, or until set. Garnish with more cheese if desired. Or, preheat oven to 350 degrees. Thoroughly butter the ring mold. Combine as directed and bake 25-30 minutes. |
