Ingredients: 2 lbs green beans, cooked, keep warm 5 slices bacon, diced 1 large onion, minced 4 tbs flour 1 c water or stock 3 cloves salt, vinegar, and sugar to taste
Directions:Fry bacon in a skillet until half cooked. Add minced onion and saute slowly until bacon is brown and onion is deep golden. Remove bacon and onion and reserve. Sprinkle flour into bacon fat. Saute slowly, stirring constantly, until mixture is light brown. Add cold water or stock, stirring constantly, so that sauce remains smooth. Return fried bacon and onion to sauce. Add cloves and simmer 20 minutes. Add salt to taste and season with vinegar and sugar until sauce has an even half-sweet, half-sour flavor. Serve over poached over string beans. Sauce is also good served over poached or hard-cooked eggs. |
