1 kg peeled and cut potatoes
1/2 kg mushrooms, cut if too big
parsley, celery leaves chopped
plain or seasoned salt, pepper
3 spoonfuls oil or butter
1/2 cup of water
optional: a handful of peas, or finely sliced carrots or peppers
1. Mix everything well in a casserole dish and bake in the oven at medium for 40 min or until the potatoes are cooked and golden. Serve hot but it is equally delicious at room temperature as long as you have not used butter.
2. If there are any leftovers you can take it out of the fridge, mix it with some lemon juice, diced pickles and mayonnaise and have a cooked-vegetables salad.
