Ingredients: 3/4 cup creamy peanut butter 1/2 cup shortening (i.e., butter Crisco) 1/2 cup granulated sugar 1/2 cup light brown sugar, packed 1 egg 1-1/2 cup all purpose flour 3/4 teaspoon baking soda 1/2 teaspoon salt Guava Jelly Directions:1. Preheat oven to 375 F. 2. Beat peanut butter, shortening and both sugars until well blended. Beat in egg. Stir together flour, baking soda and salt. Gradually beat into peanut butter mixture. Shape dough into 1" balls. Place on cookies sheet 2" apart. Place thumb in center of each ball to make an indentation (or use the handle of a wooden spoon). Bake 8-10 minutes or until just set. 3. Remove from oven. Immediately fill centers with guava jelly (placing the jelly in a plastic bottle with a cone tip makes filling the centers easier). 4. Cool 10 minutes. Remove from cookie sheet. |
