Ingredients: 2 Tablespoons vegetable oil 1 or 2 large onions, quartered 2 cloves of fresh garlic 1 butternut squash, seeded and cut into chunks 1 eggplant, cut into 1 inch cubes 2 potatoes, white, or red cut into chunks 2 yams or sweet potatoes 1 pkg of fresh mushrooms, whole or cut up 1 or 2 zuchinni, sliced thick 1 each red, green and yellow peppers, cut into chunks 1 or 2 fresh tomatoes SPICES: (all to taste, start with a pinch, and add more if desired) Basil Oregano Pepper Salt Add any other spices and seasonings that please your palate Directions:In a Dutch oven, saute the cloves of garlic and the onions in the oil until they just begin to become translucent. Add the butternut squash and potatoes next, then the eggplant, zuchinni, mushrooms peppers and tomatoes. Sprinkle the spices/seasonings on top and let simmer on a low flame until butternut squash and potatoes are fork-tender. Generally 20 to 40 minutes. |
