Ingredients: 2 egg whites 1/2 cup quick or old fashioned oatmeal 1/2 cup whole wheat flour 1/2 cup cornmeal 1/2 cup enriched white flour 1 tablespoon baking powder 1 1/2 cups buttermilk 1 teaspoon vanilla extract Frozen or fresh berries for topping (strawberries or raspberries)
Directions:Lightly oil and preheat a waffle iron. In a bowl, beat egg whites until stiff. In a second bowl, mix together the oatmeal, whole wheat flour,cornmeal, and white flour. Mix in the baking powder. Add buttermilk and vanilla extract and fold in the beaten egg whites. Pour half the batter into a heart shaped waffle iron and bake until done. You can make a puree of strawberries using fresh or frozen berries in the food processor or add a little Grand Marnier liquior for a little "kick", if desired. You can also use a pink grapefruithalf with heart shaped pieces of berries for garnish. Fresh squeezed orange juice with a little grenadine for red color is a good beverage. |
