Directions:In a skillet, heat oil and brown cut-up chicken on both sides over medium heat. Remove the chicken and drain. In a small bowl, mix together 1 CUP cranberry juice and cornstarch. Add to the skillet with soy sauce, vinegar,and sugar. Cook over medium heat, stirring, until slightly thickened. Add the chicken and cook over low heat for 15 minutes. Stir in 1 CUP cranberry juice, blanched almonds, raisins, uncooked instant rice, salt, and sliced green bell pepper. Bring to a boil, reduce the heat, and simmer covered for 10 minutes. Let stand for 5 minutes before serving. |
