Sugar cake

Ingredients:
4 Tablespoons butter
1 and 1/4 cup sifted cake flour
1 and 1/2 teaspoons baking powder
2 large eggs
3/4 cup sugar
1/2 cup milk or water
1 teaspoon vanilla extract or the zest of one lemon, preferably organic

Directions:
1. Preheat oven to 350 degrees Fahrenheit. Cut a circle of parchment paper the same size as the inside of the cake pan and press into the bottom of the pan. Grease and lightly flour cake pan (over parchment paper).
2. Melt the 4 Tablespoons of butter and set aside to cool somewhat. Mix the flour and baking powder together and set aside. In a large bowl, whisk together the eggs and the sugar for several minutes until foamy. Add the vanilla
extract or lemon zest to the eggs. Stir the milk or water into the cooled, melted butter.
3. Beat the liquid ingredients into the eggs, then stir in the dry ingredients. Beat by hand for one to two minutes until batter is smooth. Pour the batter into the prepared pan.
4. Bake for about 30 minutes, until a cake tester inserted into the center of the cake comes out clean. Cool on a rack. Gently peel off parchment paper.
