Ingredients: 8 carrots, peeled and trimmed 1 clove garlic minced 1/2 tsp ground cumin 3 Tbs sweet paprika 1/2 tsp lemon juice Sugar 2 tsp salt Olive oil 1 roasted red bell pepper, cut into medium-size square 1 to 2 Tbs chopped fresh parsley Directions:Steam whole carrots until tender; set aside. Mix garlic, cumin, paprika, lemon juice, sugar, salt and olive oil in small bowl; drizzle over carrots. Roll carrots on plate to coat with dressing. Sprinkle red bell pepper and parsley over top. |
