Ingredients: For Cookies-- Cream Together: 1/2 cup unsalted butter 1/2 cup sugar Blend in: 1 egg 1 t. vanilla extract 1/2 t. salt Mix in: 1-1/4 cups all-purpose flour Spread Out and Bake. For Cabernet Sauce- Simmer, Strain, Reduce: 12 oz. fresh cranberries 1 cup Cabernet wine 1 cup orange juice 3/4 cup sugar For Filling-- Blend Together: 2 cups mascarpone 1-3/4 cups heavy cream 1/2 cup powdered sugar Directions:1.Preheat oven to 350?. Cream butter and sugar until light. Blend in vanilla, salt, and egg. Stir in flour. 2.Drop batter by tablespoons onto ungreased sheet pans. With a small knife, spread in 3" rounds. 3.Bake 10-13 minutes, until golden. Transfer while hot to a cooling rack. Store airtight until ready to serve. 4.For the sauce, simmer all ingredients just until berries pop. Strain; reduce until thick (about 15 minutess). Cool. 5.Blend filling ingredients just to soft peaks-don`t overmix! Transfer to piping bag with star tip. 6.Prepare sugared cranberries. To assemble, anchor a cookie on plate with a little filling. 7.Just before serving, pipe 5 rosettes on a cookie. Add some berries; top with another cookie. You'll make 3 tiers. 8.Spoon sauce around the base of napoleon. Garnish with berries and mint. Serve immediately. |
