Ingredients: 125 g (5 oz) dried apricots, finely chopped 450 g (1 lb) uncooked couscous 1 tbsp olive oil 2 tbsp roughly chopped coriander 100 g (4 oz) spring onions, chopped Directions:1. Place the chopped apricots in a bowl, cover with boiling water and leave to soak for 10 minutes. 2. Meanwhile, place the couscous in a large bowl and add enough boiling water to cover by 6 mm (1/4 inch). Cover tightly with clingfilm and allow to stand for 10 minutes until cooked. 3. Drain the apricots well and add to the couscous, fluffing it up with a fork. Add the remaining ingredients. Mix well and serve immediately. |
