Ingredients: 1 red onion 1/2 deseeded red pepper 1 tbsp olive oil 2 cloves of chopped garlic 1 tsp caster sugar 2 tsp balsamic vinegar Seasoning 6 slices of French bread 150 g Le Brin cheese Dried chilli flakes Directions:Thinly slice red onion and deseeded red pepper. Fry both in olive oil for 5 minutes until softened. Add chopped garlic and caster sugar, and fry for 5 more minutes, stirring until caramelised. Stir in balsamic vinegar and seasoning. Lightly grill 6 slices of French bread on both sides until golden. Spoon onion and pepper marmalade on top and place on a grill rack. Cut Le Brin cheese into 12 slices and arrange two slices on each slice of toast. Sprinkle lightly with dried chilli flakes if liked and grill until cheese is just beginning to melt. |
