Ingredients: 6 catfish fillets Lemon pepper Garlic powder Red pepper Black pepper 1/3 cup butter or margarine 1 tablespoon parsley -- minced 1/3 cup chopped green onions 1/2 pound shrimp, seasoned with salt and pepper, chopped 1 cup crabmeat 1 1/2 cups bread crumbs, diced 2 to 3 Tb chicken broth 1 tablespoon dry white wine Melted butter Lemon juice Sauce: 1/2 cup butter, melted juice of one lemon 1 tablespoon parsley, finely chopped 1/8 teaspoon garlic powder Directions:Rinse and dry fillets. Season with lemon pepper, garlic powder, red and black pepper. Set aside. Melt butter in saucepan. Add parsley and green onions. Saute 2-3 minutes. Add seasoned shrimp, cook until pink. Add crabmeat and bread crumbs. Add chicken broth and wine to moisten mixture.Place fillets in pan lined with foil. Broil in preheated broiler 3 minutes. Turn fillets over. Baste with butter and lemon juice. Spread dressing over each fillet and broil 5 minutes longer. Mix butter, lemon juice, parsley and garlic powder together. Warm and serve sauce with broiled catfish. |
