Ingredients: 1 tsp salt 1 tsp minced fresh thyme 1/2 tsp chili powder 1/2 tsp onion powder 1/2 tsp dried oregano 1/2 tsp cayenne pepper 1/2 tsp sweet paprika 1/2 tsp ground black pepper 1/2 tsp fennel seeds, crushed 1/2 tbsp garlic powder 4-6 oz. halibut fillets 2 tbsp olive oil 4 tsp butter Directions:Preheat oven to 400 F. Mix first 10 ingredients in a small bowl. Place fillets on a baking sheet. Brush both sides with 1-tbsp oil. Sprinkle each with seasoning. Heat heavy large skillet (preferably cast-iron) over high heat until very hot. Add remaining 1-tbsp olive oil and swirl to coat. Place fillets in skillet. Cook until very brown on bottom, 1 minute. Return fillets to baking sheet with browned side up. Place in oven and bake until just opaque in centre, about 8 minutes. Top each with 1-tsp butter. |
