1 1/2 lb. Ocean Perch fillets, 3/4-inch thick
3 tbsp butter
3 tbsp flour
1 tsp salt
1/2 tsp dry mustard
1/4 tsp dried dill weed
Dash of cayenne
1 1/2 cup half and half
1 1/2 cup shredded Cheddar cheese
4 oz. small salad shrimp
1. Cut fish into serving pieces; arrange in single layer in greased 2 quart baking dish.
2. In saucepan, melt butter; stir in flour and cook until bubbly. Add salt, mustard, dill and cayenne. Remove from heat and gradually stir in half and half. Return to heat, stirring until thick.
3. Mix in 1 cup of cheese and shrimp. Pour sauce over fish; sprinkle remaining cheese. Bake at 400 F for about 20 minutes.
