4 cups baby carrots, halved
1 tsp. salt
1 tsp. black pepper
2 cups black dates, pitted and chopped
3 cups water
1 tbsp. white sugar
1 tbsp. cornstarch
1. Steam baby carrots for 10 minutes until tender.
2. Meanwhile, put salt, black pepper, dates, water and sugar in a pan. Bring to a boil and cook for 10 minutes until water has reduced and fruit is soft.
3. Using a food processor, puree dates and water mixture. Add cornstarch and blend until smooth. Serve baby carrots hot, smothered in the sweet date sauce - great as an accompaniment to pork or chicken.
