Ingredients: 1 large eggplant, peeled and sliced thin 6 eggs, slightly beaten 1 cup milk 1/4 tsp salt 1/4 tsp black pepper Olive oil (or vegetable oil) 1 cup all purpose flour (approximately) 1 cup shredded cheddar cheese Directions:1. Beat together the eggs, milk, salt and pepper. 2. Heat the oil in a large frying pan using medium high heat. When the oil is hot, dip each slice of the eggplant into the egg and milk mixture coating well. then coat with the flour. 3. Place the coated eggplant slices in the hot oil, frying on each side. While the eggplant is cooking on the second side, sprinkle some of the cheddar cheese on the slice, and removing from the pan after the cheese is melted. 4. Place on a serving dish and serve with rice and meat or as desired. |
