Ingredients: 2 T. vegetable oil 1 lb. green beans, cut in 1-inch pieces 1 sm. onion, sliced thin and separated into rings 1 clove garlic, crushed 1 tsp. salt, divided 1/4 tsp. black pepper 1 c. tomatoes, peeled and chopped 1 1/2 sweet basil, crushed Directions:Heat oil to medium high in skillet; add beans, onion rings, garlic, 1/2 teaspoon salt and pepper. Stir-fry for 2 minutes. Cover and reduce heat to medium low; cook for 20 minutes, stirring occasionally. Stir in tomatoes, remaining 1/2 teaspoon salt and basil; cover and cook 5 additional minutes. |
