Ingredients: 1 lb. turkey kielbasa sausage, cut into 1/4 inch slices 1 lg. onion, chopped 2 lg. carrots, thinly sliced 1 lg. turnip, diced 49 oz. can regular or low-salt beef/veggie/chicken broth 6 cups water 1 cup pearl barley 1 T. fresh minced oregano, or 1 tsp. dried crumbled 1-2 bunches Swiss chard, red or regular Directions:Rinse Swiss chard, trim stem from leaves, chop stem and leaves, and set aside separately. In a tall pot over medium heat, saute together sausage, onion, carrots and turnip. Stir often until meat and vegetables are lightly browned, about 10-15 minutes. To pot, add liquids, barley, chard stem and oregano. Bring to a boil over high heat; cover and simmer until barley is tender, about 30 minutes. 10-30 minutes before serving add chard leaves and simmer uncovered. |
