Ingredients: 3 T. butter 1 onion, diced 2 carrots, diced 2 stalks celery, diced 3 T. flour 4 cups chicken broth 1 lb. turkey, cooked, large diced 2 T. parsley, chopped 1/2 tsp. thyme salt and pepper to taste Directions:Melt the butter in a heavy soup pot. Add the onions, carrots, and celery. Cook until just soft. Whisk in the flour and cook 5 minutes. Add the broth and stir until well mixed. Bring to just under a boil. Add the remaining ingredients, reduce heat and simmer 45 minutes. Serve warm. |
