Ingredients: 1 lb. Marinated Shrimp 3 Tbs. oil 1 1/2 cup mayonnaise 1/2 cup sour cream 4 Tbs. scallion, sliced 4 Tbs. lemon juice 2 cups celery chopped 7 tsp. curry powder 4 medium-sized cantaloupe 2/3 cup oil 2/3 cup lemon juice Directions:Saute shrimp in oil until translucent, drain, refrigerate shrimp until needed. Combine mayonnaise, sour cream, scallion, lemon juice, celery and curry powder. Add shrimp. Chill several hours, or overnight preferably. Halve and seed melons. Make balls. Reserve melon shells. Toss balls lightly with oil and lemon juice, chill. Just before serving, cut a slice off bottom of melon to make it more stable. Fill melon with shrimp mixture, garnish with melon balls. |
