Ingredients: 1 can (8 oz) pineapple tidbits 3 cups grated carrots 3 cups grated apple 1/2 cup raisins 1 pkg (10.5 oz) silken tofu 2 Tbs honey or maple syrup 1/8 tsp cinnamon Chopped soy nuts (optional) Directions:1. Drain the pineapple tidbits, reserving the juice. In a bowl combine the pineapple, carrots, apple and raisins. 2. Measure 1/2 cup reserved pineapple juice. You will probably need to add additional liquid (preferably fruit juice) to make 1/2 cup. In a blender puree the tofu with the 1/2 cup juice, honey and cinnamon until smooth. 3. Pour over carrot mixture and toss to coat well. If desired, top each serving with chopped soy nuts. |
