Ingredients: 1 12-ounce package rotini pasta 4 to 5 cups of any combination of garden produce: squash, cucumbers, onions/scallions, sweet peppers, fresh corn, carrots or tomatoes 1/4 cup chopped fresh basil 1/4 cup chopped Italian parsley pickled vegetables: asparagus, onions or green beans
Directions:Cook pasta as directed on package, drain well. Dice the vegetables into bite-size pieces and add to the pasta while it is still warm. Add herbs and pickled vegetables (cut into bite-size pieces), and let pasta-vegetable mixture sit at room temperature while preparing the dressing. |
