Ingredients: 1/3 cup olive oil 3 Tablespoons cider vinegar 1 Tablespoon fresh dill weed, chopped or 1/2 teaspoon dried dill weed 1/2 teaspoon salt 1/2 teaspoon sugar 1 dash pepper 1 English cucumber, thinly sliced 3 large tomatoes
Directions:Combine oil, vinegar, dill, salt, sugar, and pepper in a medium glass bowl; whisk until well-blended. Add cucumber slices and toss until all are coated. Cover and chill at least 3 hours. Arrange sliced tomatoes on individual plates. Spoon cucumber mixture over tomatoes and serve. |
