Ingredients: 2 cans (15 oz. each) black beans, rinsed and drained 1 can (2 1/4 oz.) sliced ripe olives, drained 2 medium tomatoes, chopped 4 medium green onions, chopped 1/3 cup shredded Cheddar cheese 1/4 cup chopped fresh cilantro 2 Tbsp. lime juice 1 tsp. ground cumin, or chili powder 1/4 tsp. pepper 4 cups chopped spinach Directions:Mix beans, olives, tomatoes, onions, cheese and cilantro in large bowl. Mix lime juice, cumin and pepper; toss with bean mixture. Serve on spinach. |
