Ingredients: 1 (10-oz) pkg. frozen black-eyed peas 4 C. cooked rice 1/2 C. chopped celery 3 plum tomatoes, diced 3 green onions, chopped 3 T. red wine vinegar 2 T. vegetable oil 1 tsp. salt 1/2 tsp. chopped thyme 1/4 tsp. ground pepper Directions:Mix all ingredients together. Chill and serve as side dish for these hot summer evenings. I serve with grilled pork chops or grilled chicken |
