Tipsy apple pancake (beschwipster apfelschmarren)
8 eggs, separated
1/2 tsp cinnamon
80 g sugar
120 g flour
2 apples, peeled, diced
2 tbs chopped hazelnuts
4 tbs raisins
4 tbs butter
400 g pitted cherries
1/2 Ppudding mix, vanilla flavor, (not instant)
4 cl cherry Brandy

1. Beat egg whites until stiff peaks form. Beat egg yolks, cinnamon and 3 tbs sugar till light and fluffy. Carefully fold in flour. Toss together apples, hazelnuts, raisins and carefully fold into flour mixture.
2. In pan heat 2 tbs butter, pour half of batter into pan and bake until golden on underside. With fork or spatula tear into pieces and turn frequently until fully cooked and golden brown. Keep warm. Repeat with remainder of batter.
3. Bring to boil cherries with sugar. Stir pudding mix with a little water until there are no lumps. Stir into cherries and bring to boil. Remove from heat and add cherry brandy (Kirschwasser). Arrange apple pancake on platter with the cherries. Sprinkle with confectioners` sugar and serve.
