1 kg saddle of pork
6 whole peppercorn
1 bay leaf
1. Put the smoked saddle of pork in a pan and cover with cold water. Bring to the boil and scum if necessary.
2. Add the vegetables and continue to simmer under a lid for 30 minutes. Turn of the heat and leave in the warm water for another 20 minutes. Slice and serve with garnish and hot mustard.
