Ingredients: 8 ounces spaghetti, or other long, thin pasta 1/2 cup peanuts 3 tablespoons soy sauce 3 tablespoons water 2 tablespoons lemon juice 1 tablespoon honey 1 tablespoon vegetable oil 1/2 cup minced peeled onion 2 clove garlic, peeled and finely chopped 3 cups bean sprouts 1 cup chopped snow peas 1/4 cup sliced green onions Total time: 30 mins
Directions:1.Cook pasta according to package directions. Drain and set aside. 2.Place peanuts in a blender and blend until finely chopped. Set aside. 3.In a small bowl, combine soy sauce, water, lemon juice and honey. Set aside. 4.Heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic. Cook, stirring, 2 minutes, or until onions are slightly tender. 5.Add bean sprouts, snow peas and half of the soy sauce mixture. Cook 2 or 3 minutes, stirring, until bean sprouts are just barely tender. 6.Add remaining soy sauce mixture to skillet, along with peanuts, green onions and pasta. Toss well and serve. |
