Ingredients: 1 1/2 Lbs chicken 1/4 cup raisins washed and drained 2 or 3 carrots diced 1 or 2 parsnips dice 3/4 cup kohlrabi diced 1/2 cup celeriac diced 1 cup cream 2 1/2 Tbs flour juice and zest of one lemon 1 Tbs sugar 4 tbs butter Directions:Boil chicken in 6 cups of water. Skim off scum that floats to surface. In a small pan saute vegetables in half the butter then add to chicken. Simmer 15 minutes. add raisins. Make white roux with butter and flour and add to soup. Finally stir in cream, lemon juice, sugar and grated zest of lemon. |
