1/2 pound flour
3/4 cups water
1 tsp salt
1. Measure dry ingredients into a bowl. Make a "well" in the center and break eggs into it. Slowly add water and mix with wooden spoon. Beat until smooth. Let stand about 20 minutes to get stiff enough for easy handling.
2. Place one heaping spoonful of dough onto a wooden cutting board. Spread flat with a spatula. With a sharp knife dipped in hot water (you will need to dip frequently) cut narrow strips of dough, scrape off the board into 2 quarts of boiling water. Cooks in about 1 1/2 minutes. Remove to a colander with a slotted spoon, and continue with above until all dough is used.
