Ingredients: 4 eggs, separated 1 apple 250 gr flour 125 ml milk 125 ml Mineral water 4 tbs sugar 4 tbs butter 2 tbs almond slivers 2 tbs raisins 1 pinch salt lemon juice Directions:1. Beat egg yolks and salt till foamy. Add and mix in flour and 2 tbs sugar, then milk and mineral water. Let dough rest for 10-15 minutes. In the meantime, peal apple, slice into thin wedges and sprinkle with lemon juice. 2. Beat egg whites until very stiff peaks form; carefully fold into flour mixture. 3. In pan heat 2 tbs butter, add and heat 1 tbs sugar mixed with 1 tbs almond slivers until caramelized. Spread one-half of the apple wedges over the mixture in pan, pour one-half of batter over apple/sugar-almond mixture, sprinkle with 1 tbs raisins. Fry at medium-low heat for 5 minutes, turn and bake other side until nicely browned. 4. Prepare a 2nd pancake from remaining ingredients repeating above instructions. |
