Boil the potatoes. Start in cold salted water. When boiling, cook until the potatoes feel soft enough for a knife to slice easily in. 2. In a skillet, sweat the garlic in a bit of olive oil. De-salt the cod for 24 hours in cold water, then poach and peel it. 3. Puree the cooked potatoes. 4. Add the egg yolk, cod and seasoning (be gentle with the salt, as the cod is already salty). Mix thoroughly. 5. Prepare the breading ingredients (egg yolk, flour, breadcrumbs). 6. Make little balls with the potato mixture. Roll them in flour, then egg yolk and finally in bread crumbs. Repeat for every little ball. Fry for a few minutes in hot frying oil. When golden, drain on paper towels and serve immediately. |
