Crayfish marinated
1 kilo crayfish
1/2 a cup of olive oil
3 spoonfuls of flour
2 tomatoes
1/2 a cup of vinegar
1 bay leaf - some rosemary
salt and pepper
oil for the pan
For the batter:
1 1/2 cup of flour
1 teaspoon of baking powder
1 egg
a little salt

1. Clean the crayfish and then boil them into some salted water for a little time.
2. Prepare the batter. In a bowl put the flour, the baking powder and some water, and mix them together. Peel the crayfish carefully and throw away the heads. Dive them into the batter and fry them into hot oil.
3. When you finish frying, add the half cup of olive oil into the pan. When hot put in the flour and cook it until brown. Melt the tomatoes and put them in the pan along with the vinegar stiring carefully. Then add the bay leaf, the rosemary, salt and pepper and some water and boil them until the sauce is thick. Pour it over the crayfish.
