Ingredients: Low fat cooking spray 1 medium boneless skinless chicken breast, sliced very thinly 1 carrot, cut into matchstick shapes 2 spring onions, sliced 1/2 red pepper, deseeded and thinly sliced 1 tablespoon soy sauce 1/4 teaspoon grated fresh ginger 1/2 teaspoon cornflour 4 tablespoons water
Directions:1. Using a non-stick pan and the low fat cooking spray, stir-fry the chicken and vegetables for 5 minutes. 2. Mix together the rest of the ingredients and add to the pan. 3. Mix in well and cook for 2-3 minutes, stirring constantly. |
