Peel the shallots and garlic, finely mince them. 2. Brown in oil in a pot. Add the pieces of rabbit and bacon dice. Brown on all side, then add flour. Stir with a wooden spoon to spread the flour. 3. Moisten with white wine and broth, add the bouquet garni, salt and pepper. Cover and simmer for 30 minutes over low heat. 4. Meanwhile, wash, peel and coarsely crush the potatoes. Remove the soiled stem from the mushrooms, wash and slice them. 5. Add tomatoes and mushrooms in the pot and cook for 20 more minutes. Season if needed and serve with fresh pasta. |
