Apple pancakes (apfel pfannkuchen)
Ingredients:
750 gr tart apples (such as Granny Smith)
250 gr all-purpose flour
3 level tsp baking powder
1 heaping tbs sugar
1 egg
125 ml milk
Oil for frying
50 gr sugar

Directions:
1. Peel apples, remove core, cut into 1 cm thick rounds. Sift flour and baking powder into bowl. Stir egg into half of the milk. Add sugar and egg/milk mixture into center of flour, stir and mix in only enough milk resulting in thick - not runny - batter. Stir well enough to avoid lumps in batter.
2. Heat sufficient oil in pan (or deep fryer). With tongs drop apple slices/pancakes into hot oil, turning once till both sides are golden brown. When done, remove with slotted spoon and let excess fat drain on paper towels. Sprinkle with sugar and serve warm.
