Ingredients: 1 chicken (about 3 pounds) 1/2 teaspoon salt 1/8 teaspoon pepper 2 tablespoons butter 1 1/4 cups dry bread cubes or pieces 1/4 cup chopped onion 1/2 teaspoon dill weed 1/4 cup hot milk 1/3 cup butter, melted
Directions:1. Sprinkle inside of chicken with salt and pepper. Tuck wing tips underneath wings. Chop liver. 2. Saute liver in 2 tablespoons butter 2 minutes Add bread cubes, onion, dill, and milk; mix. 3. Stuff chicken. Close and secure with poultry pins. Place in a ceramic or earthenware casserole. 4. Pour melted butter over chicken. Cover. 5. Bake at 350 F about 1 hour, or until chicken is tender. 6. If desired, remove cover. Baste. Increase temperature to 450 F. Bake 10 minutes to brown. |
